Holy Guacamole – 4 ingredient healthy deliciousness
I don’t know if I’ve ever met anyone that didn’t like Guacamole. I do know a few folks that are allergic to avocados and I must say, I pray for them to get over their allergy because seriously? Never getting any of that creamy avocado goodness mixed with Pico de Gallo and lemon? My husband might leave me if I told him I was never making Holy Guacamole again. It just tastes THAT good.
3 ripe avocados mashed until creamy
Side note – I LOVE my potato masher. I mash avocados for Holy Guacamole. I mash the black bean mixture for Black Bean Enchiladas in Poblano Sauce. I mash tofu to break it up. And yes, I do use it to mash potatoes. What a great kitchen gadget.
Seriously, you have to make this. Make the Pico ahead of time so you can quickly toss it into the mashed avocado. Add a few squirts of lemon, a dash of salt, and you’re done. It’s seriously that simple. Eat it alone or put it on top of your favorite Mexican food dishes. Put it on toast. Whatever your preference – just try it. Guarantee you’ll like it!Print
Holy Guacamole is a 4 ingredient healthy tasty guacamole recipe that will make your taste buds dance with joy!
- 3 ripe avocados
- 3/4 cup Pico de Gallo
- 1/2 a lemon, juiced
- 1/4 to 1/2 teaspoon salt
- In a mixing bowl, mash 3 ripe avocados.
- Add 3/4 cup Pico de Gallo.
- Add the juice of half a lemon and 1/4 to 1/2 teaspoon (your preference on taste) and stir to mix all ingredients.
- Because of the lemon juice, this will not turn brown (like avocados do) for several days.
- Will keep in refrigerator for up to 5 days.
- Do not freeze.
- Makes 1.5 to 2 cups.
